‘Fasolada’ or ‘fasoulada’ comes from the word fasoli which means ‘bean’, and is considered to be the national food of Greece. It is basically a vegetarian soup made with dried white beans, slowly cooked with chopped tomatoes (some people use tomato puree) and vegetables such as carrots, onions, parsley, and bay leaves, with a little olive oil. A winter favorite, this soup apparently has its origins in ancient Greece where re it was offered as a sacrifice to the Greek God Apollo, at the Pyanopsia festival.
This popularity of this soup has spread far and wide to neighboring countries like Cyprus, Egypt, Spain, and also to Brazil – each of these countries have their own variant of the fasolada, and each one is equally delicious. So, on your next vacation in the Mediterranean, if you run into some cold weather, tuck into a sumptuous bowl of fasolada accompanied by some rustic village bread, and savor a piece of Greek mythology.
