Costa Rica’s claim to fame in the culinary space has been largely shaped by coffee, as the country’s beans rank as some of the best in the world. That’s probably why even tourists visiting this beautiful Central American country with coastlines on the Caribbean and Pacific, end up exploring the coffee culture more than the local cuisine. However, you will be surprised to know that when it comes to food, Costa Ricans do excel at one thing: simple, home-style cooking (the kind cooked by grandmas). Sopa Negra is a traditional Costa Rican soup made with a combination of black beans, onions, bell peppers, hot peppers, cilantro, garlic, and chicken broth. The soup is cooked until the beans become tender, and it’s then garnished with chopped hard-boiled eggs and a dollop of sour cream or avocado slices. The eggs are cooked in the soup and then removed and peeled before being used as garnishes. This hearty bean soup is usually served with warm corn tortillas on the side and white rice that’s mixed into the soup.
