Today our guest foodie is home chef Rohini Chandra from Mumbai. Rohini had a long and successful career in the Media industry, working in leading TV networks like the Star TV network and the Time Warner group (CNN, HBO Cartoon Network) before quitting corporate life to become a full time mom to her two kids in 2007. Rohini’s passion for cooking is matched equally by her attention to detail. She doesn’t take cooking lightly, even if it’s a light meal. Her favorite is healthy, easy to cook meals for her family, which comes in handy during these days of work and school from home.
Today we are presenting the recipe of one such dish inspired by flavours of Thailand, that we are sure you will find perfect for a quick light and healthy snack.

Pan-Seared Prawns With A Sweet And Sour Dipping Sauce (Thai Style)

Prep + Cook Time : 45-60 mins

Ingredients:
Medium Prawns – 500 gms (deveined and shelled)
Salt – 2 tsp
Oil – 1 tbsp

Ingredients for dipping sauce:
Onions finely chopped – 3 tbs
Fresh finely chopped Corriander – 1/4 cup
Birds eye red chilli – 1/2tsp
Dried red chilli flakes – 1 tsp
Fish sauce – 2 tbsp
Lemon juice – 1.5 tbsp
Palm jaggery – 2.5 tbsp
Toasted and powdered hemp hearts – 1 tbsp

Method:
Wash and drain prawns
Rub salt evenly over the prawns and leave it for ten mins.
Place all the ingredients of the dipping sauce(except hemph hearts)in a bowl and set aside. Allow the sauce to rest for 20 mins at room temp.
Dry roast the hemp hearts in a skillet on medium heat making sure not to burn it. This should take around 3-4 mins.
Take off the heat and pound in a pestle and motor. Keep aside.
Return to the prawns. Briefly rinse the prawns in running water and pat dry on a kitchen towel.
Place oil in a large pan on high heat.
Place the prawns in the pan and cook for 2-3 mins. Do not over crowd the pan. You can cook the prawns in two batches of your pan is too small. Do it over cook the prawns. The prawns should have a firm bite when bitten into.
Now add the roasted hemp hearts to the dipping sauce and serve with the hot prawns.
