Greek Potato Salad: Patatosalata

Greece is every hedonist’s paradise. Packed with sun-washed ruins under perfect, azure skies, balmy Aegean lapping the long shorelines, and beaming with thriving culture and activities, this destination is the perfect summer vacation destination. Whether you are a dedicated beach bum or an adrenaline junky, you may just ask here and you shall receive. Imagine swimming alongside dolphins and sea turtles in the morning and kitesurfing, sipping cocktails and enjoying some delicious gourmet recipes in the afternoon, wandering the Byzantine footpaths, and stumbling into some local celebration. Nothing transports me to this piece of heaven as much as a delicious plate of Patatosalata.

It takes only simple, ordinary ingredients to replicate a Grecian party on your dinner plate.

Here’s how I make it:

Ingredients for Patatosalata

3 large potatoes
1/3 cup olive oil
1 tbsp lemon juice
2 cloves garlic, crushed
1 red onion, chopped finely
1 spring onion, finely chopped
2 -3 tbsp coriander, chopped
Kalamata olives, pitted
Salt to taste
Pepper to taste

Method for Patatosalata

Peel and dice the potatoes. Heat a pot of water, add salt and diced potatoes, and let the water boil till the potatoes become tender. Be careful not to over boil or the potatoes will break.
Drain the excess water and rinse the potatoes in cold water to stop further cooking.
In another bowl, add chopped onion, coriander, spring onion, Kalamata olives, and the greens.
For the dressing combine the olive oil, lemon juice, minced garlic, salt, and pepper in a bowl, using a whisk. Add the dressing to the salad.
Place the salad in the fridge to chill. If serving warm, add the dressing and serve right away.
