Despite being one of Belgium’s oldest cities, Ghent remains small enough to feel cozy but big enough to be a vibrant, relevant center for trade and culture. Known to be one of. Belgium’s best-kept secret is the recipe for waterzooi, the flemish seafood soup, that was invented in this river-port city. And over the years while the fishy soup has undergone a revamp with chicken replacing the core ingredient, preference for poultry allegedly occurred when Ghent’s waterways became polluted; Thankfully, today you can still find the original fish version (often made with pike, carp, or bass) in the narrow medieval streets of the Patershol quarter. Here restaurants cook up the soup with various vegetables and thicken it with egg yolks and cream. Hunks of bread are provided for dunking, and a soft beverage is near-obligatory for washing it down.
