We are in Spain exploring sun-drenched beaches, idyllic plazas, bustling avenues, and soaking in the beauty of Spanish art and architecture. Having traveled 4600 miles in search of the best Paella (seafood) and Calamares Fritos (fried squid rings), the popularity of Patatas Bravas baffles us. They are as inevitable order in tapas joints as egg fried rice in a Chinese restaurant. Patatas Bravas is the most popular traditional vegetarian tapas dish consisting of fried potato cubes topped with a spicy tomato sauce made with a flavorful combination of ingredients like onions, garlic, chili powder, and paprika. The dish which is often served with aioli (garlic mayonnaise) on the side, and is especially popular as a late-night snack, also lends itself to home cooking so you could make this part of your cooking repertoire and also give it a healthy spin by replacing the potatoes with yam, yucca, or sweet potatoes and sometimes even baking or air frying them.
