Tuscany – the name itself conjures up breathtaking visuals of a sun-drenched countryside in one of the most visually stunning regions of Italy. Tuscany is famous for many things – arts and culture – it’s even considered to be the birthplace of the Italian Renaissance. And its food. It has contributed many mouth-watering traditional dishes to the vast repertoire of gastronomic delights originating out of Italy.

Today, we will only talk about its famous salad – the Panzanella. Traditionally made out of stale (or dried bread) cut into cubes and tossed up with onions, tomatoes, cucumber, red and yellow bell peppers (optional) and drizzled in olive oil and vinegar. Salt and pepper to taste. In case the idea of stale bread seems a little off-putting, please note it doesn’t mean bread has gone bad, just bread that is a couple of days old and not fresh enough to be eaten by itself. You can also use sourdough bread – the results are the same. But please note that the bread is an important part of this salad – if there is no bread, it is not Panzanella.

We will soon bring you other traditional delicacies from Tuscany, but till then, toss up this delicious salad and snuggle up to watch a rerun of that sweet Hollywood flick ‘Under the Sun’ – to transport your mind and palate to Tuscany. Enjoy!
