Famously believed to have been created by a chef in a hotel in New Zealand, inspired by the legendary Russian ballerina, Anna Pavlova ( We always thought it was too much of a coincidence) who toured Australia and New Zealand in 1926. The two countries have an unwritten understanding about the joint ownership of the origins of this world-conquering dessert. Well, it’s good to know one of the things they agree on!
It’s really a simple but elegant-looking dish made with meringue – crisp on the outside and marshmallow-soft on the inside, topped with fruits and/or fruit pulp. The most popular combination is whipped cream and passion fruit. While the pavlova is a year-round favorite, the autumn special uses frosted grapes in place of the usual passion fruit – with delightful results. And, to complete the experience, sit down near a warm fire and try to catch a performance of the graceful swan-lady who inspired this immortal creation.
