What’s the first thing that comes to your mind if someone says Columbia? We guess you’ll visualize soaring Andean summits, unspoiled Caribbean coast, enigmatic archaeological ruins that you’ve mostly come across in pages of Nat Geo Magazine. Yes, Colombia boasts all of South America’s allure, and more, but ask one of the locals about the food scene and one of the first things he will recommend you to try is Ajiaco – a dense Colombian super-fuel food that combines three different types of potato. It comes accompanied by a plate of rice, avocado, corn, some capers, and a banana. You can add some or all of the side dishes into the soup, there’s no rule. Variations include added protein (chicken) and a side of cream making it a favorite in the Columbia capital of Bogota and beyond.
