7 Thanksgiving Leftover Ideas

Sure, we all look forward to stuffing our faces full of turkey or in our case (roast chicken) and pie on Thanksgiving. But you know what’s even better than the main meal? Getting to eat all the leftovers for a week straight. That’s why we’ve put together recommendations of what you could do with your Turkey Day ingredients, such as mashed potatoes, roasted turkey, and cranberry sauce. It’s impossible to choose a favorite but how does leftover turkey pizza, ultimate leftover turkey club sandwich, or Sweet Potato Casserole Pancakes sound? The delicious dishes don’t stop there—the turkey cranberry brie grilled cheese and turkey stuffing waffles or Roasted Butternut Squash and Turkey Tacos are seriously out of this world too. Whether you are gearing for a Black Friday shopping spree or planning to spend the day relaxing on the couch, or you have family members traveling in from out of town, everyone will be thankful to wake up the day after Thanksgiving to be served even more delicious bites.

1. Turkey/Roast Chicken Pizza: For this recipe, first make your own pizza dough or if you are too tired from the Thanksgiving cooking, just get the pizza base from the super market. Use the gravy as pizza sauce and top it with leftover turkey or roast chicken, mashed potatoes, vegetables, and drizzle a bit of leftover cranberry sauce. Sprinkle some mozzarella cheese and bake it in the oven. The kids will love it too.

2. Turkey/Roast Chicken Burger or Club Sandwich: Assembling this leftover Thanksgiving sandwich is easy. Warm up the breast in butter or simply heat it in the pan with a bit of the leftover gravy. Add leftover cranberry sauce to the mayo. Spread the cranberry mayo on the slices of bread or even burger buns, top it with the warmed turkey, and some of the leftover stuffing. That’s a sandwich hard to say no to!

3. Turkey/Chicken Pot Pies: This is one of the best ways to enjoy leftover roast turkey/chicken. A creamy filling loaded with turkey/chicken and veggies is tucked inside a flaky pie crust (easily available in super markets) and baked until golden and bubbly!

4. Turkey/Chicken and Mashed Potato Croquette: Add the leftover mashed potato to shredded turkey/roast chicken. Season with salt and pepper. Add a bit of corn flour to hold the mixture together. Roll the mixture into round balls. Dip them in eggs and coat it with bread crumbs deep fry them.  Serve with cranberry sauce.

5. Turkey/Roast Chicken Wraps: Spread gravy on wraps. Top with turkey/roast chicken, cranberry sauce, and leftover veggies and roll tightly.

6. Roasted Brussels Sprouts Salad: In a bowl mix the leftover roasted brussels sprouts, leftover honey glazed carrots, cranberries, and add some fresh salad greens. Drizzle with a basic vinaigrette dressing made with olive oil, lemon juice, salt and pepper. Top it with crushed walnuts or pecans to add some crunch.

7. Cranberry Banana Smoothie: Here’s an easy morning-after recipe. In a blender, combine cranberry sauce, bananas, and yogurt. We bet you’d want to have this for breakfast every day.
